Raw (vegan!) pineapple lumps.

When I was younger, I used to love snacking on Pineapple Lumps, Gingernuts, and Mint Tim Tams. Since all of these are processed and full of refined sugars, I stopped eating them once I started to understand more about health. Plus, by then I was already leaning towards veganism, and gelatin and milk chocolate were certainly not vegan at all. So when I discovered the wonders of frozen pineapple chunks dipped in chocolate sauce, I thought "hey, I may as well make pineapple lumps out of these." 

And so, these yummy, healthier versions of the classic were born. This recipe needs only four ingredients, a bowl and a freezer. Oh, and will power too; you don't want to be licking the chocolate off the bowl before you even dip the frozen chunks of fruit. 

Pineapple Lumps

8 chunks of frozen pineapple
2T cacao powder
2T coconut oil
2T honey/maple syrup/raw coconut nectar

Make the chocolate coating by combining the cacao, coconut oil, and liquid sweetener of choice in a small bowl. Whisk until thoroughly combined, and add water(if needed) until the desired consistency is achieved. 

Line a baking sheet with non stick paper. Ensure the sheet can comfortably sit in the freezer without toppling over. 

Dip the frozen pineapple into the chocolate one by one, until fully coated. Line on the baking sheet, and freeze for at least two hours. 

Pop out of the freezer and enjoy!
