They're here!

Guess what guess what guess what. My grandparents are finally here for a visit! I'm so excited that they're spending a month with us this April, considering that they were meant to visit February of last year. Nevertheless, they're here now and that's what matters. Guess what else I'm excited about?

Two words.
Coconut. Heaven. 

Yep, because my lovely grandparents were kind enough to bring me some coconut products from the beautiful islands of the Philippines. Check out the loot:


Coconut jam, coconut butter, coconut flakes, coconut oil, coconut cacao powder, coconut nectar... Coconut coconut coconut. Wow, that's a lot of coconut in one sentence. You can see a bit of cashews too, since those are also abundant in some areas of the Philippines. Ahhhh the excitement! The coconut jam isn't exactly raw, but since its contents are only coconut milk and coconut sugar I figured this would be a-okay. That is, as long as I treat it as a treat, and not eat half the jar in one sitting... Oops.

Anyway, I made this quick treat out of the coconut-y goodness I just received. Took no more than three or four ingredients, and took less than 5 minutes to make. Are ya ready?


Coconut banana stacks! That's simply banana slices layered with coconut butter and coconut jam in between, then topped off with a sprinkle of cacao nibs. I'm sure those would be available in health food stores or perhaps even normal supermarkets if you're lucky. What else do I have to say except nomnomnom? 


Oh, and I think my grandparents must've though I was weird taking numerous photos of these. It's all for a very good reason though, and also so I can try something a little bit different for this blog post...


It's a GIF! Well, you probably don't care much for the GIF, but I wanted to try it out anyway. Just so I can extrude those layers and display them in all their glory. Besides, it basically tells you how to make these.


Coconut Banana Stacks

1 banana, sliced into rounds
1T coconut jam 
1T coconut butter
Handful of cacao nibs 

Start off with one banana round, top with a bit of the coconut butter, and layer with another slice of banana. Top that with a bit of coconut jam, add another banana, and finish off with some cacao nibs. Eat.
