Vegetable Taco Salad + Guac+ Tomato Mango Salsa + Sour Cream

First of all, May the Fourth be with you! If you know what I'm on about, you're pretty awesome. If you don't... Well, you're still pretty cool too.

For my May the Fourth post, I decided to make a quick vegetable taco salad, although in all honesty it doesn't have much relevance to Star Wars. BUT I have been craving Mexican food lately (especially guacamole!) so here ya go. Now by 'quick' I mean it takes minimal hands on preparation, but if you have enough time you can heat up the vegetable taco mix in a dehydrator if you please. Everything else takes about 5 minutes max each to make. 

Vegetable Taco Salad with Guacamole, Tomato Mango Salsa and Sour Cream

Vegetable taco mix:

4 portobello mushrooms
1 carrot
2 stalks celery
1/2 red onion
2 cloves garlic, minced
Juice from 1 lemon
1T cumin
1T paprika
1T oregano
1/2t chilli powder (or less, if you want)
Pinch cayenne pepper (more or less depending on preference)
Pinch of sea salt

Roughly cut up all the vegetables before combining in the food processor. Process until combined but still a bit chunky before stirring in the lemon juice, spices, herbs and salt. Adjust to taste and dehydrate if you wish. Otherwise, set aside.

Tomato Mango Salsa:

4 tomatoes, roughly chopped
1 mango, cubed
1/2 red onion
Generous handful of cilantro
1T capers
Juice from 1 lemon
2t liquid sweetener
1t olive oil
Pinch of sea salt

Toss together the tomatoes, mango, red onion, cilantro and capers. Set aside as you combine the lemon juice, sweetener, olive oil and salt in a small bowl. Toss until well combined and chill in the fridge while preparing the guacamole and sour cream. 


1 avocado
Juice from 1/2 lemon
Pinch of sea salt

Mash avocado in a small bowl and add in lemon and salt. Chill.

Sour Cream:

1/2C cashews
Juice from 1/2 lemon
Pinch of sea salt
Enough water to blend

Blend everything in a blender until smooth. Transfer to small bowl.

To put together:

2C kale

Lay the kale on a plate, and layer on the toppings starting with the vegetable taco mix. Top with salsa, guacamole, and sour cream. Yum yum yum, dinner is served.
