I scream, you scream, we all scream for ice cream!

Ahhh, ice cream, you are my salvation from the 30+ degrees Celsius heat of Manila. I'm particularly looking at you, frozen banana vanilla soft serve. 

And you too magical mango sauce that goes with it.

I suppose you can say this version of the easiest ice cream ever was inspired by childhood memories; I always used to have the Php10 (equivalent to roughly NZD0.30) soft serves down at the local fast food chain. Back then, I found it magical when the sauce on my soft serve turned solid upon contact. Today I decided to recreate that magic using one of my favourites: coconut oil. 

The trick is actually quite logical; coconut oil melts at temperatures above 24 degrees Celsius, and solidifies below that temperature. So, drizzle a little bit on ice cold ice cream and tada- smooth mango goodness turns into a crunchy hard shell. Although as you can see, 'a little bit' isn't really enough for me... Gotta love those mangoes and coconut-y goodness.

On a slightly different note, am I the only one who thinks of the minions from Despicable Me every time someone mentions bananas? Have you guys seen it? If you haven't you definitely should! Whether you're 8 or 80, just go. I can actually imagine a bunch of banana loving vegans/raw vegans/people in general acting like the minions when it comes to bananas. Hah. Ah, imagination.

Also, do you guys like my new tea cup from Porcelain Rove? It's from the local art and craft fair, and I think it's pretty rad. Handmade using recycled coffee cups as a mould too, hence the perfectly weird shape. I almost didn't use it for my ice cream, since it looks too pretty to be used. But then, that would be a waste, wouldn't it?

I'll stop talking now, since you probably just want the recipe. So here it is! I hope you enjoy it as much as I did.

Vanilla Soft Serve+ Magic Mango Sauce

Soft serve:
2 medium bananas, frozen overnight
1T vanilla 

Mango sauce:
Half a mango, peeled and chopped
3-4T raw coconut oil

Place the frozen bananas in a food processor and process until smooth. Add in the vanilla and adjust to taste. Transfer to a bowl and set aside in the freezer.

In the same food processor, process the mango until smooth. Pour into a bowl and slowly add the coconut oil while mixing. Drizzle on top of the soft serve. If it doesn't harden upon contact, then place in the freezer for a minute. Top with almonds or buckwheat granola for extra crunch. Enjoy!
