Mango Papaya Rolls + Chocolate Sauce

I would say that rice paper rolls are one of the quickest and easiest dishes to make; chop up some lettuce, julienne some carrots, mix in some bean sprouts, toss in some mint, roll it all up, and you're good to go. This version is rather similar, except that this can be eaten not just for breakfast, lunch, and dinner, but also for dessert. Why? Because these are in fact filled with fruits and chopped cashews, before then being dipped in a tangy chocolate sauce. Ya like?

Mango Papaya Rolls + Chocolate Sauce

1/2 papaya, julienned
1 mango, julienned
Chopped cashews
Rice paper wrappers

Chocolate Sauce: 
1T cacao powder
1T coconut nectar/sugar or any other sweetener
1T coconut oil
1T lime juice

To make the rice paper rolls soft, submerge into warm water for a couple of seconds until it isn't crisp anymore. Arrange the julienned fruits horizontally near the edge facing you, allowing just enough space on the left and right so that you can properly seal the rolls. Sprinkle a bit of chopped cashews on top of the fruits before rolling. Cut into even pieces with a sharp knife.

Mix everything together in a small bowl to make the chocolate sauce. After mixing it well, pour into small dipping bowls or drizzle on top of the rolls themselves.
