Melon Mint Granita

I can't believe it took me so long to before I finally gave this simple recipe a try. It's rather similar to one of my earliest salad recipes, although this time, it's in the form of a granita. I know for you Southern Hemisphereans summer is on it's way, so here's a tribute to you. I'll miss you, but I'll see you again in February.

Melon Mint Granita:

1/2 large melon, chopped into chunks then frozen
3 generous handfuls of mint (or more if preferred), finely chopped
2t coconut sugar, or more if preferred (optional)
Juice of 1 lime

Pulse the frozen melon chunks until it is roughly chopped. Add in the mint, sugar, and lime juice and pulse again. Make sure you don't over pulse, because otherwise the heat of the food processor/blender would make your granita melt faster. Adjust to your taste, and enjoy under the summer sun.
